first course, with sweetbreads. so he offered to substitute &
we chose ...
"salad of
heirloom beets, crabmeat, cherrywood bacon, mizuma, and quail
eggs, with black-eyed pea croutons", which was my favorite
course, tho i handed the bacon off to cousins.
